

Fajita chicken wrap
Ingredients
- ½ small chicken breast
- ¼ each red and yellow capsicums
- ¼ small red onion
- 1 tsp olive oil
- ½ tsp smoked paprika
- ½ tsp ground cumin
- garlic clove, minced
- lime juice or balsamic vinegar
- wholegrain wrap

Instructions
1 Slice chicken, capsicums and red onion into thin strips, then marinate together in a bowl with olive oil, smoked paprika, ground cumin and minced garlic clove.
2 Heat a griddle or non-stick frying pan and cook all ingredients together until the chicken is cooked through and the vegetables are tender.
3 Finish by deglazing the pan with a squeeze of lime juice or a little balsamic vinegar. Assemble wrap and chill in the fridge or a cooler bag until ready to eat.
Variations
Optional: grated reduced-fat cheese, reduced-fat sour cream and jalapeños make excellent additions.
