

Date scones
Ingredients
- 3 cups self-raising flour
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- 50g reduced-fat spread
- ¾ cup chopped dates
- 1 cup reduced-fat milk,
- plus extra
- 2 tablespoons low-fat
- plain yoghurt
- ½ teaspoon ground cinnamon mixed with ½ teaspoon sugar (optional, for topping)

Instructions
1 Preheat oven to 200°C. Lightly dust a large baking tray with flour. Into a large mixing bowl, sift flour, salt and cinnamon. Add spread and rub in using fingertips until the mixture resembles fine breadcrumbs. Add dates and briefly stir to combine. In a small bowl, combine milk and yoghurt. Make a well in the dry ingredients and add the milk mixture. Mix quickly with a knife to form a soft dough.
2 Turn onto a floured surface and knead lightly. Press out to about 1-1½cm thick and cut into even-sized squares.
3 Place on prepared baking tray, leaving about 2cm between each scone. Brush the tops with extra milk. Sprinkle over cinnamon sugar, if using. Bake for 10-12 minutes or until golden brown.
HFG tip
Try other dried fruit in these scones, like sultanas or raisins, or diced dried apples or apricots. You could add a few crunchy walnuts too!
