

Chive soup scones
Ingredients
- 1 cup self-raising flour
- ¾ cup wholemeal self-raising flour
- 30g reduced-fat spread
- ²⁄³ cup reduced-fat milk
- 2 tablespoons finely chopped fresh chives
- 1 teaspoon dried mixed herbs
- 2 tablespoons grated parmesan

Instructions
1 Preheat oven to 200°C. Line a large baking tray with baking paper.
2 In a large mixing bowl, combine both flours and rub spread into flour with fingertips until the mixture resembles fine breadcrumbs. Make a well in the centre, then pour in the milk. Add chives and dried mixed herbs. Mix quickly with a knife to form a soft dough.
3 Turn dough out onto a floured surface and knead lightly. Roll out to 3cm thick. Cut into squares or rounds. Place on the prepared tray and sprinkle with parmesan. Bake for 12 minutes or until just golden and hollow when tapped on top.
4 Serve with your favourite soup
