

Gluten-free apple and blackberry squares
Ingredients
- ½ cup reduced-fat spread
- ¹⁄³ cup caster sugar
- 2 eggs
- 1 teaspoon ground cinnamon (check it’s gluten free)
- ½ teaspoon ground nutmeg (check it’s gluten free)
- 1 teaspoon vanilla extract
- 1¼ cups gluten-free plain flourall purpose flourX
- 2 teaspoons gluten-free baking powder
- 385g tin apple slices, chopped
- 1 cup blackberries (thawed if frozen)
- 2 teaspoons icingfrostingX sugar, to dust

Instructions
1 Heat the oven to 180°C/160°C fan. Line a 20cm square baking tin with baking paper.
2 In a large bowl, whisk together all the ingredients (except the apples, blackberries and icing sugar) until well combined. Gently fold through the fruit.
3 Transfer mixture to the prepared tin and bake for 35-40 minutes until well risen and golden. Remove from the oven and cool in the tin for 15 minutes, then transfer to a wire rack to cool completely.
4 Cut into 16 equal squares and dust with the icing sugar before serving.
