

Smoked salmon, cos, mango and avocado salad
Ingredients
- ⅓ cup mango fruit juice
- 2 teaspoons extra-virgin olive oil
- 2 teaspoons Dijon mustard
- ½ teaspoon lemon pepper (optional)
- ½ teaspoon black pepper
- 1 cos lettuce, torn or sliced
- 2 mangoes, flesh cut in wedges
- 1 avocado, de- stonepitXd, cut in wedges
- 1 bunch mint
- 200g smoked salmon, roughly chopped

Instructions
1 Combine juice, oil, mustard, lemon pepper (if using) and pepper in a screw-top jar. Secure lid and shake until well combined.
2 Combine lettuce, mangoes, avocado, mint and salmon in a large bowl. Add dressing and toss until well combined. Serve immediately with bread rolls.
Variations
Prawns would work equally well in this fresh salad.
