

Salmon and noodle stir-fry
Ingredients
- 4 x 100g salmon fillets, skin removed
- 2 tablespoons salt-reduced soy sauce
- 2 tablespoons mirin
- 1 tablespoon rice vinegar
- 200g medium-thick noodles
- 1 red capsicum, sliced
- 2 carrots, thinly sliced or cut in strips
- ½ cup edamame beans
- 2 teaspoons sesame oil
- 1 tablespoon sesame seeds, toasted, and
- 2 tablespoons fresh coriandercilantroX to garnish (optional)
- 2 bunches Asian greens, steamed, to serve

Instructions
1 Place salmon in a non-metallic dish and add soy sauce, mirin and rice vinegar. Leave to marinate for 10 minutes.
2 Meanwhile, preheat grill. Line a roasting pan with foil and add salmon, reserving marinade. Cook noodles according to packet instructions. Drain.
3 Place salmon under grill to cook. Meanwhile, heat a large pan with a little oil spray then add veggies and 2 tablespoons water. Cook for 3-4 minutes. Add cooked noodles and sesame seeds (if using), with the reserved marinade. Bring to the boil, stirring occasionally.
4 After 6-8 minutes, once salmon is nicely charred, remove from the grill and set aside. Remove noodles and vegetables from the heat and stir in sesame oil. Divide among plates and top with salmon. Garnish with coriander if using. Serve with steamed Asian greens.
Variations
Make it gluten free!
Check soy sauce is gluten free and use rice noodles.
