Instructions
1 Preheat oven to 160ºC. Place 6 ramekin dishes (125ml capacity) in a large roasting pan.
2 In a medium heavy- bottomed saucepan, combine the trim milk, custard powder, evaporated milk, sugar and vanilla; whisk until smooth. Bring to the boil over medium heat, stirring often, until the mixture thickens slightly. Remove from heat.
3 Place the egg yolks in a small bowl; whisk lightly to combine. Add a small amount of the hot custard to the yolks while stirring. Pour this mixture into the saucepan, whisking as you do so.
4 Divide berries between the ramekins. Pour hot custard over the top. Pour hot water into the roasting dish to make a water bath for the custard. Bake for around 25-30 minutes, or until the custard is set. Remove ramekins from the water bath and refrigerate several hours, or until completely cold. When ready to serve, sprinkle 1 teaspoon of sugar on top of each ramekin. Place under a hot grill and cook until the sugar is caramelised.

Although I would like to agree that it is better to eat a healthy, sustainable diet with the emphasis on strength and well-being – I do know what I’m talking about as a virtual long life dieter! In 1975 I lost two and a half stone! After six months maintenance I found that I could maintain this ‘healthy weight’ by losing lbs rather than stone when I needed to lose weight! I wouldn’t call myself a binge eater! But ‘listening to your body when it feels hunger’ does not work, if like me you are a comfort eater! To be successful at maintaining a healthy weight which I consider I am! At 72 I am about 4lbs heavier than my target weight in 1975! I think the secret is to know your own mind and body and be at peace with it! Binge when you need to but don’t let that feeling engulf you or your eating! When you feel ‘better’ tell yourself you can cope with getting back to the shape you were – think positive rather than thinking diet and failure! Look at it as a new chapter in your life!
