

Mixed berry overnight oats
Ingredients
- 1 small ripe banana
- 4 strawberries
- ¾ cup reduced-fat Greek-style yoghurt
- ²⁄³ cup rolled oatsoatmeal uncookedX
- 1 teaspoon honey
- 1 tablespoon freeze-dried raspberries, plus extra to garnish (optional)
- ²⁄³ cup reduced fat milk (or plant-based alternative)
- 1 teaspoon raspberry jamjellyX
- ¾ cup mixed berries, eg, blueberries, raspberries, sliced strawberries
- 2 tablespoons sliced almonds, toasted

Instructions
1 In a food processor, blitz banana, the 4 strawberries and half a cup of the yoghurt until smooth. Spoon between two glasses or jars. Cover and chill overnight in fridge.
2 In a medium bowl, place oats, honey, freeze-dried raspberries, if using, and milk. Stir well to combine. Cover and chill overnight in fridge.
3 In a small microwave-safe bowl, combine jam, a quarter of the mixed berries and 1 teaspoon water. Microwave, covered, on high for 1 minute or until berries soften into a compote (see HFG tip). Cover and chill overnight in fridge.
4 To serve, in each glass spoon half of the compote over half of the yoghurt mix followed by half of the oat mix. Spoon over a final layer of compote, followed by the remaining oats. Top with remaining berries, yoghurt and freeze-dried raspberries, if using. Garnish with almonds.
HFG tip
You can make the compote in a small saucepan on the stovetop if you prefer. Just simmer for about 2 minutes or until softened.
You can save step 3 for the morning if you’d like a warm compote instead of chilled.
Money-saving tip: You can use thawed frozen berries instead of fresh. They work particularly well for the compote.
