

Passionfruit ‘martini’
Ingredients
- 2 cups ice
- 650ml low-sugar cloudy apple juice
- ¹⁄³ cup lime juice, plus lime zest for garnish (optional)
- 4 passionfruit, halved

Instructions
1 In a jug, place the ice, apple juice and lime juice. Stir gently and divide evenly among martini glasses.
2 Garnish each martini with passionfruit pulp and half, and top with lime zest, if using.

If fresh passionfruit is not available, use canned passionfruit instead.
