

Marinated tofu burger
Ingredients
- 2 x 1 ½cm-thick slices tofu
- 4-5 tablespoons teriyaki marinade
- 1 tablespoon sesame seeds
- To serve
- olive spray oil
- 1 cup shredded stir-fry vegetables
- 3 tablespoons sweet chilli sauce
- 2 white or grainy buns

Instructions
1 Cut each tofu slice in half to form a triangle. Place in a dish with marinade and sesame seeds. Leave to marinate for 1 hour.
2 Heat a pan with a little oil and stir-fry vegetables for 2-3 minutes. Remove from pan. Stir sweet chilli sauce into vegetables.
3 Add a little more spray. Heat for a few more minutes. Add tofu and cook for 2 minutes each side.
4 Place tofu in buns. Top with stir-fried vegetables.

Be sure to use firm tofu when marinating so the burger patties remain intact.
