Ingredients

- 125g medium cooked prawns, peeled and deveined (reserve 1 unpeeled prawn for garnish)
- iceberg lettuce leaves, shredded
- ¼ tomato, diced
- ¼ small avocado, diced
- Sauce
- ¼ cup mayonnaise
- 1 tablespoon sweet chilli sauce
- 1 teaspoon tomato sauce
- 1 teaspoon lemon juice
- 1 teaspoon gherkin relish

Instructions

1 Make the cocktail sauce by mixing together all the sauce ingredients. Cover and refrigerate.
2 Combine lettuce, tomato and avocado in a glass (a tumbler is ideal). Arrange prawns on top of the salad and drizzle with prepared cocktail sauce.
3 Decorate the glass with a slice of lemon and the unpeeled prawn, if desired. Serve immediately.
